Banana-Oatmeal Bread

Every six months or so Drew and I do an inventory of the food we keep in the freezer. We make a list of all the random foods that are found there and post it on our fridge to remind us what things are in there / what to try to use up. As we tend to freeze a lot in order to reduce waste (frozen chopped veges, spice mixes we create, leftovers, soup stocks, etc.) this seems to really help us make sure some of those things don't ending finding a permanent home in our freezer. :)
Anyways, there seems to be a lot of frozen fruit in our freezer right now and I am working to find ways to use it up. For tonight's challenge I started simple: Banana-Oatmeal bread to use to some frozen over-rip bananas.
I found this recipe on here on allrecipes.com; however it was originally published in Cooking Light Magazine. The verdict was good from both Drew and I after tasting. It was a nice variation off our usual banana chocolate chip bread and easy to make too. Not as sweet as the chocolate chip variety and the oatmeal gave it a nice chewiness- perfect for a snack or quick breakfast. Try it yourself and let us know what you think!

(Note: As a slight variation from the recipe found at the link above, in my version I used 3 large frozen bananas (instead of 2) for extra moisture (and to use up those bananas!) and increased the cinnamon to 1T)
